Sesame and jaggery is actually a good combination . It increases the health benefits of sesame. It is the simple recipe, main thing is jaggery syrup consistency. Be ready with bowl of water to check the consistency when the syrup starts to froth. Just drop a little syrup in water initially it forms googly , then soft ball and finally the hard ball. Hard ball brittle consistency is correct consistency for this candy. When you drop syrup in strand formit should able to break with tick sound. If the consistency not reaches the brittle, the candy will be chewy. After the hard ball consistency, the syrup will start to burn and make the jaggery bitter taste. So keep the flame on lower side.
Let's move on to the simple healthy recipe.
INGREDIENTS
Yield - 300gm sesame seed candy
Sesame seeds - 1 Cup
Jaggery - 1 Cup
Cardamom - a pinch
Water - 2 Tbsp
PROCEDURE
1. In a pan, roast sesame seeds for medium low flame until the sesame seeds start to pop .
2. Transfer the sesame in a plate.
3. Grease a big tray or plate and rolling pin.
4. In the same pan, add jaggery , water and allow it to melt and filter it if there any impurities. ( Prue jaggery doesn't need to filter.
5. Transfer the filter jaggery syrup,add cardamom and allow to boil in medium low flame until the brittle consistency. (when the syrup dropped into a bowl of water it forms hard ball and able to break with a tick sound )
6. Quickly pour the sesame seed and mix gently until it well combined.
7. Immediately transfer them into the greased tray and roll medium thickness ( should not too thick or too thin).
8. While it hot, mark using greased knife into square or desire shape.
9. Allow it to cool down and carefully snap the sesame candy.
10. Healthy , tasty crunchy sesame seed candy is ready.
11. When it is cool completely, store in airtight container.
