Spinach is a super good. It is loaded with tons of nutrients with low calorie. It provides protein, iron,vitamins and minerals. It is also an excellent source of vitamin k, vitamin A, vitamin ,c and folate. Vitamin k is good for bone health, Vitamin A is good for eye health and vitamin c helps to increase immunity power. It is good source of manganese, magnesium and potassium. Due to its high potassium content, helps in lowering blood pressure. Spinach provides antioxidants which helps in reducing the risk of cancer.
Spinach is one of the yummy creamy healthy soup. It tastes as similar to broccoli soup. I was feared while trying this soup first time. But it tastes delicious. After that I made this several times.
Lets move on yummy soup recipe....
INGREDIENTS
Spinach - 3 Cups
Onion - 1
Garlic - 5- 6 pods
Oil - 1 Tsp
Butter - 1 Tbsp
Water - 1 Cup
Wheat flour - 1 Tsp
Milk - 2 Cup
Salt - as per the taste
Mozzarella cheese - 3 Tbsp (optional)
(Shredded)
Pepper - as per the taste
PROCEDURE
1. In a pan, add little oil and saute chopped onion and garlic.
2. Then add washed spinach and saute until the leaves wilt and reduced it volume.
3. Then add in the water and allow to cook for around 5 min.
4. Allow the cooked spinach to cool.
5. Meanwhile in another pan, add butter and allow to melt.
6.Then add the wheat flour and saute in low flame until raw flavor goes.
7. Now add the milk by continuous stirring to avoid lump formation.
8. Then allow the milk to boil at medium low flame until the milk gets thick to the desire consistency.
9. Now grind the cooked spinach.
10. Add the grounded spinach into the milk.
11. Now allow the soup to heat for around 2 min.
12. Add salt, freshly ground pepper and shredded cheese.
13. Now yummy healthy spinach soup is ready to serve.
14. Sprinkle some shredded cheese at the top while serving ( it is optional).
