Gingerbread cookies are the cookies made with spices such as dry ginger, cinnamon, cloves etc. In the winter weather it is good to add some spices in our daily diet. Adding spices to cookie is ideal for the kids to increase their immunity power. In this recipe, I changed few of the ingredients to make it little more healthier. Let's run into the recipe.
INGREDIENTS
Whole wheat flour - 1.5 Cup
Jaggery powder - 3/4 Cup
Coconut oil - 1/2 Cup
Baking soda - 1/4 Tsp
Baking powder - 1/2 Tsp
Salt - 1/4 Tsp
Dry ginger powder - 1 Tsp
Cinnamon - 1/2 inch
Clove - 2
Cardamom - 2
Cookie cutter
PROCEDURE
1. In a large bowl, add coconut oil and jaggery powder and whisk very well with wire whisk or electric hand mixer.
2. In another bowl, take the dry ingredients whole wheat flour, baking powder, baking soda,salt,dry ginger powder, ground other spices and add along with it.
3. Sieve all the dry ingredients into the coconut oil and jaggery mixture.
4. Mix well to make crumble.
5. Then add water little by little to make well combined dough .
6. No need to knead, just wrap in the dough in cling wrap or zip lock and refrigerate for at least 2 hrs or overnight.
7. On next day, take dough out from refrigerator for 30 min.
8. Roll the dough using rolling pin into 1/2 inch thick and using desire cookie mold ( here I used gingerbread man and star cookie mold )make different shapes.
9. Reroll the scrap dough and repeat the same with remaining dough.
10. Preheat oven to 350F
11. Transfer the molded cookie dough into the baking tray lined with parchment paper.
12. Bake for 10- 12 minutes or until the cookie get brown from edges.
13. Transfer hot cookies into wire rack and allow to cool for a while.
14. Yummy gingerbread man is ready to run into the tummy.
15. Cookie stays fresh upto a week at room temperature in airtight container.
