INGREDIENTS
Pomegranate juice - 3/4 Cup
Mixed nuts (chopped) - 1/2 Cup
Dry fruits (chopped) - 1/2 Cup
Tutti fruiti - 1 Tbsp
Butter - 1/2 Cup
Raw sugar brown - 3/4 Cup
Egg - 2
Vanilla Extract - 1/8 Tsp
Whole wheat flour - 1 Cup
Baking powder - 1/2 Tsp
Baking soda - 1/2 Tsp
Salt - 1/4 Tsp
Cocoa powder - 1 Tbsp
OPTIONAL SPICES
Cloves - 2
Cardamom - 2
Cinnamon - 1/2 inch
Dry ginger powder - 1/2 Tsp
PROCEDURE
1. Extract pomegranate juice from fresh fruit by pulsing the pomegranate seeds ( don't grind much) and filter the juice.
2. Finely chop dry fruits and nuts.
3. Soak the nuts, dry fruits and tutti fruity in filtered pomegranate juice for minimum 2 hrs.
4. Preheat oven for 350F
5.After 2 hrs, in a large bowl, take room temperature butter and raw brown sugar and mix until it blend together.
5. Then add in room temperature eggs mix very well using hand mixer or electric mixer.
6. Now it's time to add soaked nuts, dry fruits , tutu fruiti along with pomegranate juice and add vanilla extract.
7. In a another bowl, take all the dry ingredients and seive two or three times.
8. Now add the dry ingredients to the wet ingredients.
9. Add all ground spices and mix gently by cut and fold method.
10. Gently transfer the cake batter into the greased cake pan ( I used loaf pan) lined with parchment paper.
11. Tap the cake pan gently and bake the cake around 30 min or until to get clean toothpick.
12. Yummy soft tasty and healthy cake is ready .
13. Allow to cool down and transfer into wire rack.
