HEALTHY JOWAR BANANA COCONUT MILK MUFFIN

Jowar is gluten free whole grains which is called as sorghum in English and cholam in tamil. It belongs to the millet variety. It is rich in protein, fibers and iron. It is rich in magnesium which helps in the calcium absorption. It also has vitamin B, E, phosphorus, copper,zinc and Potassium. It is rich in antioxidants. Fibers helps in good digestion and weight loss. It helps in controlling blood glucose. It helps in lowering LDL cholesterol which reduces the risk of heart attack. 

It is a simple after school snack. It is very easy and delicious muffin because of the tasty ingredient Coconut milk. It enhances the taste and flavor of the muffin. Let's move on to the recipe.




 INGREDIENTS 

Jowar flour         - 1/2 Cup 

Wheat flour        - 1/4 Cup

Jaggery powder  - 5 Tbsp 

Ripen Banana     - 1 (long)

Coconut milk      - 1/2- 3/4 Cup 

Baking soda        - 1/2 Tsp 

Salt                       -  a pinch 

Cardamom          - 1 (crushed)


PROCEDURE 

1. Mash well ripened long banana with a fork.



2. Then add in jaggery powder and mix very well.

3. Now add coconut milk , mix everything together.



4. Sieve the jowar , wheat flour, baking soda and salt twice.

5. Then add the dry flour mixture little by little into the coconut milk mixture.( Adjust the consistency) and add crushed cardamom without skin.

6. Preheat oven to 350 F 

7. Now line the muffin tray with the muffin liner.

8. Pour 3/4 of the cup with batter.


9. Bake for 15- 20 min or until reaches the clean toothpick.

10. Now yummy soft and moist muffin is ready to taste.
