HEALTHY BLACK RICE IDLI

     Black rice is more than just a nutritious grain. It has several health benefits such as boosting eye health, heart and kidney health. Black rice got the black purple color from a pigment called anthocyanin, which has potent antioxidant properties, anti inflammatory, antioxidant and anticancer effects.. It has nutty flavor and chewy texture. It is rich in protein, fiber and iron.  

     Along with anthocyanins, black rice contains high amount of lutein and zeaxanthin (carotenoid pigment). these act as an antioxidants to protect eyes (retina) from blue light waves.

     In this post, we are going to incorporate the healthy rice to the perfect breakfast recipe idli to make it more nutritious. Lets move on to the healthy and simple recipe.





INGREDIENTS

Black rice            - 1 Cup

Idli rice               - 3 Cup

Urad dal              - 1 Cup 

Fenugreek seed   - 1Tsp

Cooked rice        - 1 Cup

Salt                     - as needed


PROCEDURE:

1. Wash idli rice, black rice, urad dal, fenugreek seeds 2 or 3 times with water.
2. Soak the rice and black rice separately in water for at least 4 hrs.





3. Soak urad dal and fenugreek together in water for at least 4hrs.

                                     


3. After 4hrs, drain the water and grind urad dal and fenugreek in mixie into a smooth batter.
4.Then grind idli rice and black rice separately into a smooth batter.



5. Finally grind cooked rice with little water .
5. Transfer all the ground batters in a large vessel.
6. Then add salt and mix well with hand.
7. Keep aside overnight for fermentation.
8. Batter become airy and fluffy after fermentation.
9. Allow water to boil in the steamer (idli pot), grease the idli plate with sesame oil and pour the fermented batter .
10. Then place it in the steamer for 10 min.



11. Remove idli plates from steamer and allow to cool for few min
12.Then take the idli from idli plate with wet spoon.



13. Soft and healthy  idli is ready to taste with chutney or sambar.
