Jowar is gluten free whole grains which is called as sorghum in English and cholam in tamil. It belongs to the millet variety. It is rich in protein, fibers and iron. It is rich in magnesium which helps in the calcium absorption. It also has vitamin B, E, phosphorus, copper,zinc and Potassium. It is rich in antioxidants. Fibers helps in good digestion and weight loss. It helps in controlling blood glucose. It helps in lowering LDL cholesterol which reduces the risk of heart attack.
The recipe is very simple tasty and healthy. It makes crispy dosa , kids really love it. Adding onion and green chili is optional. Lets move on to the recipe
IINGREDIENT
Jowar flour - 1 Cup
Wheat flour - 1 Cup
Butter milk - 1/4 Cup
Cumin seed - 1 tsp
Hing - a pinch
Salt - as needed
Chopped onion - 1/4 cup
Green chilli - 1 or 2
Curry leaves - 1 spring
Water - as needed
Sesame oil - as needed
PROCEDURE
1. In a bowl, add jowar flour, wheat flour and salt.
2. Mix the flours with water little by little to a smooth paste without any lumps.
3. Then add in the buttermilk ( curd beater well with water).
4. Add water to make a thin batter in the buttermilk consistency.
5. Now add in the cumin seed, hing, chopped onion, chopped green chilli and chopped curry leaves.
6. Mix the batter well and allow the batter to stand for 10 minutes.
7. In a hot iron dosa pan, pour the batter in the circle like Rava Dosa this forms lots of holes.
8. Then drizzle oil on the sides of the dosa.
9. Allow to cook for a minute.
10. Then flip to the other side carefully and allow to cook for a while.
11. Now crispy tasty healthy dosa is ready to serve with coconut chutney or sambhar.
