BUCKWHEAT BANANA PANCAKES

 Buckwheat is triangular seed, which is called as papparai in Tamil and kuttu in Hindi. It is a highly nutritious whole grain which is gluten free. It is a good source of protein, fiber and it is considered to be a super food.  It is rich in  minerals (such as magnesium, potasium, copper and manganese) , (vitamin B2 and B3 )and antioxidants. It has higher essential amino acids, including lucine and arginine (essential for children). It has trypsin enzyme which has antibacterial and antimicrobial effects. Buckwheat improves heart health,promotes weight loss, manages diabetes, lowers the bad cholesterol.

Buckwheat banana pancake , addition of banana makes the pancake superb soft and fiber in buckwheat gives superb texture . Color is little darker side compare to usual pancakes. One of the good breakfast recipe, kids really love it. Lets move on to the recipe.





INGREDIENTS

Buckwheat flour         - 1 Cup 

Banana long                 - 1 

Egg                                  - 1 

Palm jaggery powder  -1 Tbsp 

( Karupatti) 

Vanilla extract              - 1 Tsp 

Baking powder             - 1 Tsp 

Baking soda                   - a pinch ( optional)

Salt                                   - 1 Tsp 

Milk                                 - 1 Cup  

Toppings (Optional)

Banana  sliced  or strawberries

Maple syrup  or honey 

PROCEDURE : 

1. In a bowl, mash a banana roughly with the help of fork.


2. Then sieve all the dry ingredients such as buckwheat flour, baking powder and salt.



3. Then add the sieved ingredients to the mashed banana and mix well.

4. Another bowl, add egg and beat well until it form foams, then add palm jaggery powder and mix well.



5. The add in the milk and mix very well.

                                     

6. Finally add the milk, egg mixture to the dry ingredients bowl and mix together.      

                                   


7. The batter shouldn't be more watery or more thick. It needs to be in pourable but little thicker.

8. Leave the batter to stand for 5 mins.

9. In a hot iron pan, ( better to use iron pan for even Browning of pancakes) add little butter and pour the batter gently and allow to spread evenly.

10. Wait until the bubble formation, then gently  turn the pancake.

11. Cook the pancake for a minute.

12. Stack 2 or 3 pancakes on a plate.


13. Arrange the sliced banana and strawberries (from our garden) and any berries.


14. Drizzle honey or maple syrup for extra sweetness ( if needed).


15. Yummy, soft , tasty , healthy pancakes are ready to serve.
