Avocado is also called as butter fruit. It is superfood rich in fibers and healthy fats. It is rich in vitamin B, E, K, C and Potassium. It is also contains magnesium, manganese, copper, iron, zinc and phosphorus. Because of the high potassium, it helps in reducing blood pressure. High fibers help in good metabolic function and reduce blood sugar. Healthy fats helps in reducing the risk of heart disease.
Always spaghetti is kids favorite, it is one of the better way to incorporate avocado in their diet. To make the spaghetti more nutritious, I used brown rice and quinoa spaghetti. lets move on to our healthy recipe.
INGREDIENTS
Spaghetti - 20 - 30 sticks
Avocado - 1
Coriander leaves - 1 hand full
Garlic - 3- 4 pods
Olive oil - 3 Tbsp
Lemon juice - 2 Tbsp
Shredded cheese - as needed
Salt - as needed
Pepper - as needed
PROCEDURE
1. In a large pan , allow water to boil with sea salt and a spoon of olive oil.
2. Once the water boiling, add the spaghetti sticks gradually. (Here I used brown rice quinoa spaghetti)
3. Cooking time differs depend on the variety of the spaghetti ( mine took around 15 min).
4. Check the spaghetti after 10min, don't allow to overcook.
5. Then strain the spaghetti immediately from boiling water using strainer.
6. Then tossed the cooked spaghetti with a spoon of olive to prevent the spaghetti sticking with each other.
7. Meanwhile, grind ripe avocado, garlic, lemon juice, coriander leaves, salt with remaining olive oil.
8. Now simple healthy delicious sauce is ready mix with spaghetti.
9. Heat a wide pan and add in the cooked spaghetti avocado sauce and shredded cheese ( preferably Parmesan or mozzarella cheese).
10. Mix gently until the spaghetti coated well with the sauce and cheese.
11. Sprinkle pepper as needed.
12. Yummy healthy tempting spaghetti is ready to serve with extra shredded cheese.
