Peanut (groundnut) is packed with healthy fats and protein. Because of low carbohydrates and high fibers, it good for diabetic people. Besides this, peanut also rich in vitamins and minerals such as Vitamin E, folate, biotin, niacin, copper, manganese, magnesium and phosphorus. Peanut also has various antioxidants. Even though peanut has various benefits, most abundant proteins in peanut are arachin and conarachin. These protein can be severely allergenic to some people which causes life- threatening reaction.
This is one the simple and healthy salad, which has protein from peanuts, and vitamin A from carrots , good fat and vitamins from Avocado , health benefits from coriander leaves etc... We can also substitute peanuts with other lentils or legumes like sprouted green gram, chick peas or other bean varieties..
Lets move on to the recipe...
INGREDIENTS
Peanut - 2 Cup
Carrot - 1
Avocado - 1
Coriander leaves - a hand full
Lime - 1 small
Cumin powder - 1/2 Tsp
Asafetida - 1/8 Tsp
Salt - as needed
Pepper - as needed
PROCEDURE
1. Soak dried peanut for around 3 hours .
2. Pressure cook soaked peanut for 4-5 whistle, with little salt, asafetida with water just to immerse the peanut.
3. Stained excess water from cooked peanut.( We can use stained water for curries or making chapati dough)
4. Now it's time to make peanut salad.
5. In a mixing bowl, add peanut, shredded carrots, lemon juice, diced avocado, sprinkle cumin powder, freshly ground pepper and finely chopped coriander leaves ( used freshly harvested coriander leaves from our garden).
6. Check the salt and sprinkle some salt if needed and mix well.
7. Tasty, healthy and simple salad to ready to serve.
