COCONUT FLOUR CAKE WITH YOGURT FROSTING




Coconut flour is made by drying coconut flesh and bake at very low temperature to remove moisture and then ground into a fine flour consistency. Coconut Flour has less carbohydrates and high fibers. Because of the high fibers, its good for digestion, regulate blood sugar, good for heart. It helps in healthy weight loss.

If we want to substitute all purpose flour with coconut flour, only 1/4 Cup of coconut flour is needed for 1 Cup of all purpose flour, and for each 1/4 Cup of coconut it need one egg for structure and moisture to the recipe. It's taste very good for cake and cookies. Lets move on to the yummy soft cake.

INGREDIENTS

Coconut Flour Cake

Coconut flour           - 1/3 Cup 

Unbleached Sugar   - 1/3 Cup 

Coconut milk            - 1/3 Cup 

Coconut oil               - 1/3 Cup 

Egg                             - 3

Baking soda              - 1/4 Tsp 

Baking powder         - 1/2 Tsp 

Salt                            - 1/2 Tsp 

Vanilla extract         - 1 Tsp 

Yogurt frosting 

Yogurt                        - 3 Cup 

Cream cheese          - 2 Tsp 

Unbleached Sugar   - 1/4 - 1/2 Cup 

Corn flour                 - 1 Tsp 

Decoration 

Cooked beetroot puree   - 2 Tbsp 

PROCEDURE 

1. Squeeze fresh coconut milk from the coconut.

                                 

2. Boil and puree the beetroot and pour inside the heart shaped cookie cutter and allow to freeze.

3. Hang homemade yogurt in the cloth to drain the water. 

4. Its better to hang overnight inside the fridge for the thick yogurt cheese.

5. Preheat oven to 350 F .

6. Powder the unbleached Sugar for cake.

7. For frosting powder the sugar with corn flour .

8. In a bowl, take egg whites and vinegar, beat until form peak.

                                     

                                     


9. Then add powder sugar in 2- 3 batches  and beat until it reaches stiff peak.

                                  

                                  

10.Now it's time to add the yellow of the egg and mixed by folding method.

                                     

11 . Sieve all the powder ingredients such as coconut flour, baking powder, baking soda and salt.

12. Add in batches and mix gently .

13. Now add coconut oil, coconut milk and vanilla extract and mix gently by folding method .

14. Pour the cake batter gently in the greased lined  heart shaped oven safe pan.

15. Tap gently to bubbles inside the batter.

16. Now it's ready to bake.

17. Bake around 30 min or until get the clean toothpick consistency.

                                      

                                

18. SUPER SOFT CAKE IS READY.

18. Allow it to cool and gently transfer into wire rack and allow to cool completely....

19. Beat hung yogurt with icing sugar, cream cheese until it blend well and form stiff peak. 

                                       




20. Carefully cut cake horizontally at the center of well cooled cake.

                                     

21. Apply yogurt frosting at the center and place the top portion of the cake .

                                     

22. Now apply frosting at the top , spread evenly over the top and sides of the cake.

                                         

23. Now it's time to unmold the frozen beetroot heart.

24. Just place vertically or horizontally over the frosted cake.

                                      

 (Can also decorate with pomegranate seeds around the surface of the heart shape.)

25. Yummy soft cake is ready for tasting.

26. It looks wonderful with the layered frosting.
