HEALTHY CHRISTMAS CAKE

 My 150th post.




INGREDIENTS

Whole wheat      - 1 Cup 

Jaggery powder - 3/4- 1 Cup 

Egg white             - 2 

Salt                        - 1/2 Tsp 

Baking powder     - 2 Tsp 

Vanilla extract      - 1 Tsp 

Butter                     - 1/3  Cup 

Milk                         - 3/4 Cup 

Vinegar                   - 1Tsp

Mixed dry fruits   :  3/4 - 1 Cup ( chopped) 

Dates 

Cashew 

Almonds 

Raisin

Orange zest 

PROCEDURE

1. Melt the 2 tbsp of jaggery with little water and soak the chopped nuts and dry fruits in the syrup. 



2. Preheat oven at 350 F

3. In a large bowl, beat room temperature butter with electric heater or whisk.( Initially start in low speed then increase the speed)



4. Then add little jaggery powder at a time and whisk with the butter until it becomes light and fluffy.



5. Then add in egg white and start to beat again to reach stiff peaks consistency.



6. Sieve the wheat flour, salt, baking  powder together.



7. Add the flour mixture in batches and mix with butter jaggery, egg mixture with cut and fold method.

8. Add room temperature milk little by little to form the cake batter consistency.



9. Finally add vinegar , orange zest (from the orange harvested from our garden) and soaked dry fruits along with the syrup and mixed with the cake batter.




10. Line the cake pan with baking sheet and grease with oil or butter to keep the butter sheet in place.

11. Then pour the cake batter in the prepared pan and tap twice or thrice to remove the bubbles.


12. Bake it  around 30 minutes , check for clean toothpick to confirm the complete cooking.



13. Allow the cake to cool for a while and transfer the cake into wire rack and allow to cook down completely.



14. Wow yummy tasty soft Christmas cake is ready..😋
