NIPPATTU (RICE CRACKER)

Nippattu is a karnataka style rice cracker made with roasted peanut, channa dal. It is one of our favorite snack made several times. Flavor is amazing because of the curry leaves. Be patience while cooking, allow to fry in low medium flame to cook from inside. Lets move on to the crispy flavorful snack recipe. I made the traditional snack with little variation.



INGREDIENTS

Rice flour                    - 1 Cup

Roasted channa dal     - 1/4Cup

Wheat flour                 - 1/4 Cup

Roasted Peanut           - 1/4 Cup

Wheat rava (fine)       -  2 Tbsp

Red chili                     - 4 Nos

Sesame seeds             - 1 Tsp 

Cumin seeds              - 1 Tsp

Asafoetida                 - 1 Tsp

Curry leaves             - 1 spring

Hot oil                       - 1 Tbsp

Salt                            - as needed

Oil for frying

PROCEDURE

1. Dry roast curry leaves, red chili and allow to cool down and grind coarsely.

2. Then dry roast wheat four without changing color

3.Then grind roasted skinless peanuts, and roasted channa dal into coarse powder.




4. In a mixing bowl, add rice flour, wheat flour, rava, cumin seed, peanut powder, roasted channa dal powder, sesame seed, asafoetida, salt and the coarse mixture of curry leaves and chili .

                                    

                                         

5. Then add hot oil and mix well.

                         


6. By adding water little by little to form firm dough.

                                   

10. Then spread small amount of dough using rolling pin and cut into a desire shape in medium thickness.

                               

11. Then make puncture using fork  to prevent puffing and cook from inside.


12. Meanwhile, heat oil in a frying pan, drop the prepared nippattu and allow to fry in medium low flame until it completely cook from inside.

13. Now crispy, flavorful, tasty nipattu is ready to serve with tea.

                                    


14. Allow to cool down and store it in the air tight container.
