RED RICE MURUKKU

Red rice is a variety of rice that is colored red by its anthocyanin content. It has significantly more potential to fight free radicals and contains higher concentrations of flavonoid antioxidants than brown and white rice. It is rich in fibers, iron, magnesium, potassium, zinc and protein. It helps to reduce blood cholesterol, blood sugar, body weight. It is good for heart, digestion and prevents asthma 



In this recipe, white rice flour is replaced with red rice flour.  Red rice is more tastier and healthier. lets move on the recipe

INGREDIENTS :


Red Rice flour             - 1 & 1/4 Cup

Roasted Channa  
 dal powder                  - 1/4  Cup
 (Pottukadalai)

Hing                              - a pinch

Sesame seed                - 1/2 tsp

Ajwain                          - 1/2 tsp

Chili powder              - 1 tsp (optional)

Salt                              - as needed

Hot oil                        - 1 tbsp

Water                         - as needed

Oil for frying


PROCEDURE :


1. Powder roasted Channa dal in mixie.

2. In a bowl add red rice flour, roasted channa powder, Hing, chili powder, salt, ajwain, sesame seed ,chili powder and mix well.

3. Heat oil for frying.

4. In mean time grease muruku press and few laddles  with little oil.

5. Add heated oil in flour mixture and mix well

6. Add water little by little to make a dough.

7. Keep the dough close to avoid drying.

8. Check the heat of the oil by dropping little dough,it should come up immediately.

9. Fill the murruku press with the dough and squeeze murruku  just little above the oil to get good lengthy murukku.
 
10. Fry until sound and the bubbles stop.

11. Always fry in medium flame to prevent burning, since it is hard to find change of color in red rice muruku.

12. Crispy and tasty  murruku is ready to serve as evening snack with tea.
