EGGPLANT PIZZA

Eggplant is one of the high fiber vegetable with low calories. It is also rich in anti oxidant, vitamins and minerals. It has iron, copper, manganese, magnesium, potassium, vitamin K and C. It regulates blood cholesterol and sugar. It helps to fight against cancer cells. It reduces the risk of heart disease.

Eggplant pizza is the gluten free pizza made with eggplant as a base. I tried this pizza in oven. It can also made on the stove top using heavy bottom wide pan. This is one of the easy and tasty pizza I ever tried. I made this pizza using our homegrown eggplant. Lets move on to the recipe.

                                       

                                     





INGREDIENT

Eggplant ( bigger purple variety)    - 1

Salt                                                  - as needed

Shredded cheese                             -  1 Tbsp per slice

Olive oil                                         - 1 - 2 Tbsp

Instant Pizza Sauce

Tomato ketchup                         - 3 Tbsp

Garlic finely chopped                 - 2 Cloves

Red chilly flakes                        - 2 Tsp

Mixed Italian herbs                   - 1 Tsp

Sugar                                         - 1/4 Tsp

Salt                                            - as needed

Vinegar                                     - 1/2 Tsp

PROCEDURE

1. Slice medium even thickness (approx 1/4 inch) of  egg plant and arrange in a baking tray. (Avoid thin slices , since it brown or burn easily)                                           

2. Sprinkle salt on the both side of the slice and allow to rest for 15- 20 min.

                                      


3. Then wipe the liquid ooze out from the egg plant.

                              

4. Preheat oven for 400 F

5. Now its time to apply or spray oil on the both the surface of the slices of eggplant.

6. Bake it for 15 minutes.

7. Meanwhile, prepare the pizza sauce by adding all the ingredients (under pizza sauce) in a bowl and mix well. Now instant and easy pizza sauce is ready.

                                  

8. After 15min take the eggplant from the oven and flip the eggplant and apply the pizza sauce and top it with the shredded cheese.

                                       


                                       

9. Now bake again for 10 minutes or until the cheese fully melt.

                                      

                                        

                                      

10. Hot, tasty and easy eggplant pizza is ready to serve. I guarantee that kids enjoy it.
