Khaman is a traditional Gujarathi dish . Usually its made by soaking channa dal and grind and ferment for around 10 hrs. But in instant version, its made using chickpea flour and no fermentation needed.
Khaman is one the healthiest snack or breakfast. Chickpea flour has high protein content and dietary fibers. Its also rich in calcium, iron, Vitamin B6, magnesium. In addition to this , it a gluten free and cook by steaming method. Lets move on to the recipe.
INGREDIENTS
Batter
Chickpea flour - 1 Cup
Wheat rava (fine) - 1 Tbsp
Green chili - 2
Ginger - 1 inch
Curd - 1/2 Cup
Salt - as per the taste
Sugar - 1 Tsp
Turmeric powder - a pinch
Lemon juice - 1 tsp
Eno fruit salt - 1 Tsp or Baking soda - 1/2 tsp
Coconut oil - 1 Tsp
Tempering
Oil - 1 tbsp
Mustard seed - 1/2 tsp
Split urad dal - 1/2 Tsp
Hing - 1/4 tsp
Green chili - 2 (optionl)
Topping
Coriander leaves
PROCEDURE
1. In a bowl, soak wheat rava with very little water for 10 min.
2. Meanwhile grind green chili, ginger to coarse paste.
3. Then add chick pea flour, coarse paste, salt, sugar, curd, turmeric powder and mix with very little water to form a smooth batter.
4. Add lemon juice , oil and mix well.
5. Place Idli cooker or steamer wiith water in medium flame.
6. Grease a wide pan or cake mold with oil
7. When the water start heated up and release steam, its right time to add eno salt to the batter and pour the batter to the greased pan. (eno fruit salt can be replaced by 1/2 tsp of baking soda)
8. Steam the batter around 15- 20 minutes (depends upon the depth of the batter) or until the toothpick comes out clear.
9. Allow them to cool for few minutes and transfer in a wire rack or plate.
10. Then add the tempering over the khaman and sprinkle some coriander leaves over it.
11. Spongy , yummy , healthy Khaman Dhokla is ready to serve green chutney or tamarind chutney.
