Red Aval (Poha) is nutritional carbohydrates, having low glyermic values. It is good for diabetic and obese people. Red Aval is fermented foods, it is rich in probiotics. It is rich in fibres, magnesium, calcium,iron and selenium. It is good for bone and teeth health.
Let's move on to the recipe.
INGREDIENTS
Red Aval (thick) - 1 Cup
Rice flour - 2 TBSP
Jaggery powder - 3/4 Cup
Grated Coconut - 1/4 cup
Water - 2 Cups
Salt - a pinch
Cardamon powder - 1/4 Tsp
PROCEDURE
1. Wash and soak red aval with very little water for 15- 30 minutes.(soaking time differ with thickness of the aval)
2. After the aval become soft, smash the aval with hand.
3. Then add little rice flour little by little to make a dough. ( depends on the moisture requirement of rice flour varies)
4. Then make small balls out of the dough.
5. Meanwhile, boil 2 cup of water in a big sauce pan.
6. Once the water get started roll boiling, add in the small balls one by one.
7. Allow the balls to cook until, the ball started floating.
8. Now its time to add the jaggery powder and pinch of salt, mix gently.
9. Allow to cook for 5 minutes.
10. Then add the grated coconut and simmer it for 5 - 10 minutes. ( Grated coconut can be replaced by thick coconut milk)
11. Finally add the cardamon powder and switch of the flame.
12. Yummy ,simple and healthy Red Aval Kolukattai is ready to serve.
