INGREDIENTS
For Dough
Rice flour - 1 cup
Salt - to taste
Water - 1 1/4 Cup
Oil - 1 Tsp
For Stuffing
Mixed Nuts - 3/4 Cup
( Cashew, Almonds, Peanuts)
Raisin - 15 - 20
Shredded Coconut - 1/4 Cup
Jaggery powder - 3/4 - 1 Cup
Cardamon - 2
Ghee - 1 Tsp
PROCEDURE
Dough Preparation
1. In a wide pan , boil water with salt and oil.
2. When water roll boil, add rice flour slowly by continuous mixing.
3. In low flame , mix gently until the flour come together.
4. Then switch off the flame, leave the flour covered until it is warm enough to handle by hand.
5. Then kneed the flour to a smooth dough consistency without crack .
6. Always keep the dough cover with damp cloth to prevent drying.
Stuffing
1. In a pan , add ghee and roast all nuts, cardamon and raisin and transfer into a bowl and allow to cool.
2. In same pan add shredded coconut and roast in a low flame to avoid browning of coconut.
3. Coarsely grind the nuts, cardamon and raisin by using pulse mode.
4. Now add the nuts mixture to the roasted coconut and mix well along with powder jaggery.
5. At one stage, the mixture starts leaving the sides of the pan.
6. This is the time to switch off the flame and allow to cool.
Kozhukattai preparation
1.In a kolukattai mould press the dough to their surface. and the fill the stuffing 3/4 of the mould and then seal it with the dough. and remove the mould. ( Instead of using mould, we can also flattened the dough and stuff the stuffing and make ball out of it or make desire shape)
2. Likewise, make all the kozhukattai with stuffing.
3. Arrange the kozhukattai in grease steamer plate or idli plate.
4. Steam it for 10- 12 minutes or until the kozhukattai looks shiny.
5. Now yummy and healthy kozhukattai is ready for serving.
