Ragi ( Finger Millets) is the king of the millet varieties. It is rich in protein, fibers, calcium, vitamin D, iron, phosphorus and potassium. It is good for diabetes and cholesterol patients. It also have anticancer, anti aging, antimicrobial effects.
Ragi idiyappam is easy way to incorporate ragi in our diets . Since everyone like idiyappam ( from kids to older people). Adding rice flour is optional, it's for softness. If you want to avoid rice flour completely it little lesser in softness. But it tastes really good. Let's go to the recipe.
INGREDIENTS
Ragi - 1 Cup
Rice Flour - 1/2 Cup
Water - 2 Cup
Oil - 2 Tsp
Salt - 1 Tsp
PROCEDURE
1. Dry roast ragi and rice flour separately in low flame. ( Until we can able to draw near straight line kolam using the flour).
2. In a pan ,heat water until it starts forming bubbles from the bottom.
3. Take the roasted flour in a wide bowl, add in the salt, 1 Tsp of oil .
4. Then add the hot water little by little and mix with spatula until the flour comes together. (Water level vary depends on the flour). So try to add little by little.
5. Then cover it and rest it until it is warm enough to handle.
6. With hand knead the flour to make a soft dough.
7. Apply oil over to avoid drying .
8. Meanwhile grease the idiyappam press and steamer plate or idli plate.
9. Add in the dough in idiyappam press and squeeze idiyappam on the steamer plates.
10. Allow water to boil idli cooker and then place the steamer plates carefully and close the lid.
11. Allow to cook around 5 - 10 minutes.
12. Now hot, soft , healthy and flavorful idiyappam is ready to serve with coconut grating and jaggery powder for sweater version or coconut chutney for savory version.
