Millet is an interesting alternative to the more common grains. It is rich in fiber which reduce LDL cholesterol and boost the HDL cholesterol . It helps in good digestion and reduce the risk of peptic ulcer and colon cancer. It is a good source of copper, iron, manganese, phosphorus and magnesium. It helps to reduce blood pressure, blood sugar, gallstone formation. It also has Vitamins B6, C, E and K, folate, niacin, riboflavin and pantothenic acid
INGREDIENTS
Millet - 1/2 Cup
(Proso)
Moong dal - 2 Tbsp
Milk - 1 Cup
Water - 1 Cup
Ghee - 2 - 4 Tbsp
Jaggery - 3/4 - 1 Cup
( Powdered)
Cashew - 5 - 10
Raisin - 5 - 10
Cardamom - 3
PROCEDURE
1. Wash and soak millets (any variety) 15 - 20 minutes.
2. Dry roast moong dal until golden brown.
3. Pressure cook the millets, moong dal with water, milk and pinch of salt
4. Allow to cook for 4 - 5 whistles.
5. Heat the jaggery powder with little water until it dissolves and filter the syrup to remove the impurities.
6. After the steam release, open the pressure cooker and smash the dal and millet.
7. Add in the jaggery syrup and heat until the raw flavor goes.
8. Meanwhile in a small pan roast cashew and raisin in ghee, then crush the cardamon.
9. Finally add roasted raisin, cashew and cardamon in the sweet pongal.
10. Add the desire amount of ghee and mix well.
11. Yummy and healthy Sweet Millet Pongal is ready to serve. ( Tastier than normal sweet pongal)
