INGREDIENTS
Whole wheat flour - 1 Cup
Dates - 10
Milk - 1 Cup
Butter - 1/3 Cup
Egg - 1
Baking soda - 1/4 Tsp
Baking powder - 1/2 Tsp
Coco powder - 1Tbsp
Salt - Pinch
Frosting
Curd - 2 Cup
Honey - 2 Tbsp
PROCEDURE
1. Soak pitted and chopped dates in hot milk for 30 minutes. ( Increase number of dates depends on the sweetness of dates)
2. Then grind the soaked dates into a smooth paste.
2. Separate egg white from the egg and whisk well until it reach white foam consistency. ( Use mixie if don't have whisk)
2. Preheat oven to 350F.
3. Sieve the dry ingredients in a separate bowl (wheat flour, baking powder, baking soda, salt , coco powder)
4. In a dry bowl add melted butter, egg yellow and mix very well ( use mixie if neeeded). Then add date paste and mix well.
5. Then goes the dry ingredients and mix gently by adding the dry ingredients. ( Don't over mix)
6. Finally add foamed egg white and just fold with batter for even mixing. ( Don't over mix)
7. Ready the pan for baking by grease with little oil or butter and dust with little flour.
8. Then pour the prepared batter and bake around 20 - 30 min until the tooth pick came out clear.
9. Allow the cake to cool and remove the cake from the pan and place in the wire rack.
10. Yummy and healthy cake is ready to serve.
For frosting
1. Hang the curd inoin the muslin cloth in fridge to remove the excess water from curd
2. Collect the thick curd from muslin cloth and mix with required amount of honey and mix well to get smooth frosting (mixie if needed).
3. Allow the cake to cool completely.
4. Apply the frosting on the top of the cake or pipe in the desire design using ziplock.
