CARROT GREEN PESTO SPAGHETTI


Carrot greens are rich in nutrients, containing around 6 times more Vitamins C than the root. They have Vitamin A, K , Potassium, Calcium and fibers.They have detoxifying effect which helps the kidney to filter toxic substance from the blood and prevents kidney stones. It regulate blood pressure, boost heamoglobin and immune system.




INGREDIENTS

Carrot greens           - 1 Cup ( tight)

Roasted Almonds    - 10  Nos

Olive oil                    - 2 Tbsp

Garlic                        - 2 Cloves

Lemon  juice           - 2 Tbsp

Black pepper            - 1/2 Tsp
( Crushed)

Spaghetti                   - 20 Sticks
( Whole wheat)

Shredded Cheese     - 1/4 Cup

Salt                             - as needed


PROCEDURE

1.  Carrot green is the top leaf portion of the 
carrot ( harvested from my garden). Remove the thick stalk and wash the green to remove dirts.





2. Grind carrot greens, garlic, roasted Almonds, oil, salt and lemon juice.

3. Now carrot green pesto is ready.



4. Boil enough water in a wide pan with salt and little oil.

5. Add the sticks of Spaghetti , cook until it is 90% done. 

6. Then strain the spaghetti and wash in cold water.


7. In a pan mix the spaghetti with pesto sauce and cheese in a medium heat. Then season with crushed pepper and switch off the flame.

8. Now yummy and healthy pesto is ready to serve.
