VITAMIN C PACKED VARIETY RICE

INGREDIENTS

Cooked rice   - 3 Cup

Gooseberry   - 5 Nos

Lemon            - 1 small

Sesame oil      - 2 Tsp

Mustard seed - 1/2 Tsp

Urad dal          - 1/2 Tsp 

Channa dal     - 1 Tbsp

Groundnut     - 3 Tsp

Hing                 - 1/4 Tsp

Turmeric        - 1/4 Tsp

Green chilli    - 4 Nos ( as needed)

Salt                   - as needed

Curry leaf       - 2 Spring

Coriander
leaves              - One hand full




PROCEDURE

1. Cook rice with salt and drizzle some sesame oil and spread it  in a large plate to get separate grains of the rice.

2. Grate gooseberry and keep aside.

3. In a hot pan add sesame oil and add all the tempering items ( groundnut, Channa dal, urad dal, hing, green chilli,turmeric and curry leaf leaf).

4. Once tempering items turn golden brown, add grated gooseberry and saute for a minute in medium flame and switch off.

5. Then add lemon juice, cooked rice,coriander  leaves and mixed well. ( Increase the lemon juice if needed)

6. Drizzle some extra sesame oil if needed.

7. Immunity boosting Vitamin C packed variety rice is ready to serve.
