INGREDIENTS
Idli rice - 1 Cup
Ragi(Whole) - 1 Cup
Whole urad dal - 1/2 Cup
Fenugreek Seed - 1/4 Tsp
Cooked rice - 1 Cup
Salt - as required
Sesame oil - 1 tsp
PROCEDURE:
1. Wash idli rice, ragi, urad dal 2 or 3 times with water.
2. Soak the rice and ragi separately in water for at least 4 hrs.
3. Soak urad dal and fenugreek together in water for at least 4hrs.
3. After 4hrs, drain the water and grind urad dal and fenugreek in mixie into smooth batter.
4.Then grind idli rice and ragi separately into smooth batter.
5. Finally grind cooked rice with little water .
5. Transfer all the ground batters in a large vessel and mix well with hand.
6. Keep aside overnight for fermentation.
7. Batter become airy and fluffy after fermentation.
8. Allow water to boil in the steamer (idli pot), grease the idli plate with sesame oil and pour the fermented batter .
9. Then place it in the steamer for 10 min.
10. Remove idli plates from steamer and allow to cool for few min
11.Then take the idli from idli plate with wet spoon.
12. Soft and healthy idli is ready to taste with chutney or sambar.
